The global food system can deliver the wrong amount of calories in foods if they’re produced in faraway countries. In countries like Niger, the price of eggs is so high because of the low productivity of egg production, which in turn limits the availability of cheap imports from the US. It’s not surprising that processed food is more expensive than healthy food, though the reason is largely related to demand rather than supply.
While we tend to think of fruits as being healthy, there are many other foods that are equally as tasty and nutritious. A variety of vegetables are packed with nutrients. A few examples are apples, Brussels sprouts, cucumbers, broccoli, lettuce, radishes, and leeks. Many fruits are full of fiber and vitamin C, and are versatile enough to add crunch to any meal. Kale, cabbage, cauliflower, broccoli, and tomatoes are just some examples of vegetables that are packed with nutrients and taste great.
